Rustic Burlap Wedding Cake
See all those sensuous swrils in the frosting? Those don't just happen. It is almost an art like piping. I used a spoon and soft frosting.
This wedding cake was frosted in an all butter buttercream tinted with a little ivory. I've decided ivory is more yellow than brown. If I were to do it again, I would use a tiny bit of brown instead of ivory for that rustic look. Buttercream swirls do not happen on cold cake. I like to keep my cake chilled because they are much more stable. This one had a cream cheese filling which is quite soft when room temprature, but quite firm when cold. When I frosted the outside, the buttercream on the outside kept getting too firm to make sensuous swirls so I ended up putting the whole frosted cake in the oven on warm for 3 minutes to heat the buttercream so I could get it to look better. In the future, I won't chill the cake, or maybe I will, I will just let it sit on my counter for an hour before frosting. Also, something to note, when using burlap, raw edges give of tons off tiny fibers. I stitched the raw edges and used a glue gun so the fibers wouldn't get in the cake. The twine is held to the burlap with hot glue.

Soft pink flower wedding cake
For this cake I tried a new filling with white cake. I took cream cheese, brown sugar, vanilla, heavy whipping cream and beat it all together then folded in a bunch of fresh strawberries chopped into small pieces. It was so yummy, but it was softer than a normal filling and I was fearful the strawberries would weep. Well, have no fear, it worked perfectly. I made sure none of the filling oozed through the buttercream on the sides. Mmmmmm. yummy.

Lace Wedding Cake
I've done a gluten free cake before and I've done a dairy free cake before, but this is the first time I've done a gluten free and dairy free cake. Fortunately this could have eggs. It is a chocolate cake with a cookies & cream filling. It has tofutti cream cheese and gluten free cookies. The cake is made straight from a mix because I have no idea how to make a cake without flour. The verdict: The cake is pretty good. Different texture, more dense, more moist and different flavor, but I liked it. The tofutti does not have a strong flavor like cream cheese so it didn't balance out the sugar like cream cheese does. I think it left the frosting too sweet. The Sandwich cookies are good, but just don't have that signature oreo flavor. Overall, not bad. It's nice that this option is available for those who can't have gluten or dairy, but I do prefer flour and oreos.
P.S. if anyone has suggestions on how to get those little jewels to sparkle in a picture like they do in real life I'd love to hear it. In my pictures they end up looking like dark spots. I took this picture outside on a cloudy day and it was the best I could get.

Burgundy and Blue Wedding Cake
I've been up to my eyeballs in cake this weekend. I doubled up on cakes and it always makes for a busy couple of days. This cake is frosted in buttercream the top and bottom tiers are yellow cake with vanilla buttercream filling and the middle tier is chocolate with chocolate ganache. I don't think I've ever seen blue roses before this, but here they are. The red roses look a little black in this picture, but they were really pretty.

buttercream wedding cake display
Instead of one cake, this bride wanted a collection of 8 cakes all different flavors and decorated differently with different toppers representing parts of their relationship.
Here are the flavors:
Cherry decorated with ruffles
Rainbow decorated with dots. What flavor is rainbow? White.
Confetti, decorated in Swirls
Chocolate, decorated in Hostess
Lemon, Decorated as a cupcake
Orange creamsicle decorated smooth
The other two cakes were a cheesecake and millefoglie (filo dough and Italian cream)

Hawiian Bridal Shower Cake with Hibiscus and Plumeria
This cake was for a bridal shower. The bride is showing off her yellow Vans she will be wearing with her wedding dress. Her wedding is in Hawaii, her colors are black and yellow and the flowers she will be having are yellow hibiscus and white plumeria.

Sunflower Wedding Cake
A few months ago my Sister-in-law came over to make a mock wedding cake for her freshman dorm. Well, one of the ladies present was engaged at the time and loved the cake. She asked Cindy to make the cake for her wedding. It turned out great. Cindy has talent.

Black Bow Purple Flower Bling Cake
I'm trying out something new called Luster Dust. It gives a shimmer to the cake. Hard to see in this picture, but if you click on it, you can see the sparkle on the fondant. I thought it was a little difficult to get even. I used the silver luster dust and thought it almost looked like it was smudged in some places. I'm sure it will get better with a little practice.

Mock Wedding Cake
My SIL who is a college freshman had a potluck with her freshman girls dorm. She decided to bring dessert and wanted to bring a wedding cake. She came over for help and here is what it looked like before the flowers.
She made sunflowers to go around it. I don't have that picture yet. When I get it I'll add it.
